Pesto Shrimp and Portobello Mushrooms
As I was scrolling through my Facebook feed, I bumped into skinnytaste’s grilled pesto shrimp skewers. The recipe looked delicious, so I decided to try making my own pesto sauce. I substituted the Parmesan cheese with shredded goat cheese. My pesto sauce came out amazing.
Ingredients: Pesto Sauce
- 1 cup fresh, chopped basil leaves
- 1 garlic clove
- 1/4 cup shredded goat cheese
- 3 tbsp olive oil
- Himalayan pink salt
- Pepper
Directions: Pesto Sauce
- Combine all pesto sauce ingredients in a food processor.
Ingredients: Pesto Shrimp
- 1 1/2 peeled and deveined jumbo shrimp
- Pesto sauce
Directions: Pesto Shrimp
- Combine pesto sauce and shrimp.
- Broil until cooked, approximately 15 minutes on each side.
Ingredients: Portobello Mushrooms
- Portobello mushroom, chopped
- Himalayan pink salt
- Pepper
- Olive oil
Directions: Portobello Mushrooms
- Add salt, pepper, and olive oil to chopped portobello mushrooms.
- Back on 350 degrees for about 25 minutes. Flip mid-way.
